What are microgreens
Microgreens are young vegetable greens — harvested when they are just 1–3 inches tall, soon after their first true leaves develop.
They lie somewhere between sprouts and full-grown leafy greens: small, tender, with stems and leaves, and come in a wide variety of colours, textures and flavours depending on the seed type.
Because they are harvested early, their nutrients are more concentrated compared with mature vegetables — making microgreens a “mini-powerhouse” of nutrition.
